No-mayo Tuna Salad

1 can good quality tuna, drained (I like Wild Planet)
1 rib celery, diced
1/2 cucumber, seeded and chopped
1/4 red onion, diced
2 T fresh lemon juice and zest
1 T extra virgin olive oil
1/2 t ground mustard
1/2 t granulated garlic
Chopped parsley
Salt and pepper
Your favorite hot sauce

Add all ingredients and gently stir to combine, trying not to break up the tuna too much. Top with avocado or fresh tomato, depending on the season. Fresh dill would be a great addition too. Serves 2.

Go with fire roasted artichokes and peppers, shaved garlic and lemon juice for a Mediterranean flavor
