Balsamic Cucumbers and Onions
This is a modified version of an old family favorite. We usually made it with white onion, cucumber, mayonnaise, apple cider vinegar and sugar, but I like this version a little better. It's quick and simple and makes a great side dish, sandwich topper, pita filler and more.
1 red onion, sliced
1 cucumber, sliced
1 clove garlic, minced
3 tablespoons mayonnaise
2 tablespoons balsamic vinegar
1 teaspoon agave nectar ~ sugar, honey, or even maple syrup will work too
pinch of salt
Mix everything and refrigerate for at least an hour. It gets better the longer it sits and lasts a couple days in the fridge. The last 5 ingredients also make a very tasty salad dressing.
