Homemade Banana Ice Cream



 
It's like soft serve ice cream and is so easy to make. You can use just bananas, but I really like my additions. The sea salt and exotically sweet vanilla really make it a standout.
 
Use fully ripe bananas (overripe bananas are even better!). Slice bananas into coins as shown and freeze flat on a plate for 1-2 hours. You can also freeze bananas whole and peel and slice when needed. I often use a mini-processor, which holds 2 bananas perfectly. Add frozen banana slices, 2 tablespoons milk, 1 teaspoon pure vanilla extract and a dash of sea salt. Repeat same ingredients for each two bananas. You could add other flavorings like peanut butter or pineapple, etc.

Pulse a few times, scrape down sides, then "blend" until it becomes thick and creamy with no lumps.

Eat immediately or freeze any leftovers. The flavor combinations are endless--peanut butter, chocolate, pineapple--you name it!

Salted honey nut caramel sauce

1/4 c freshly ground chunky peanut butter
1/4 c honey
2 T water
2 T milk
1 T vanilla extract
1 t butter
Pinch sea salt

Add all ingredients to a small sauce pan and mix thoroughly over low heat. Refrigerate leftovers. Great over any ice cream, yogurt, or apple slices.
